Our
cheeses are produced in the European farmstead cheesemaking tradition
– small production batches utilizing only the freshest milk; careful hand
labor and meticulous ripening techniques create authentic, flavorful cheeses.
Our cheeses reflect the natural elements and seasons of this Ozark region.
We produce fresh and aged cheeses. Cheeses aged less than 60 days are
produced from milk that has first been gently pasteurized, as required
by law. Raw milk cheeses, made from unpasteurized milk, age at least 60
days. Goat milk products are extremely versatile and offer many health
benefits( check our FAQs page for recipes and health benefits)
