Our cheeses are produced in the European farmstead cheesemaking tradition – small production batches utilizing only the freshest milk; careful hand labor and meticulous ripening techniques create authentic, flavorful cheeses. Our cheeses reflect the natural elements and seasons of this Ozark region. We produce fresh and aged cheeses. Cheeses aged less than 60 days are produced from milk that has first been gently pasteurized, as required by law. Raw milk cheeses, made from unpasteurized milk, age at least 60 days. Goat milk products are extremely versatile and offer many health benefits( check our FAQs page for recipes and health benefits)

Raw Goat Milk Feta
2001 American Cheese Society, 1st Place for Raw Goat Milk Feta.

Our feta is aged on average 4 to 8 months in salt brine. Our customers enjoy Doeling Dairy Feta for is sharp, full-bodied flavor: Never "goaty", and never weak in flavor, this feta is wonderful on salads, or simply with olive oil, lemon juice, black pepper and a nice crusty bread. We also pack our feta in an irresistible concoction of extra-virgin olive oil, garlic, rosemary, pink and green pepper corns and other herbs: Called The Feta Fetish, it is a feast for both the eye and the palate.

Fresh Chèvre, Plain
1998 American Cheese Society Farmhouse Goat Cheese 3rd Place Award Winner.
Our chèvre is a creamy, spreadable cheese excellent for cooking, baking, or for enjoying on crackers, bagels or blended with herbs or fruit of your choice. Our plain chèvre can be used in any recipe calling
for soft, fresh goat cheese.

Fresh Chèvre. Herbed Varieties

Our fresh chèvre blended with herbs and spices: Rosemary, Dill Garlic, Cracked Black Pepper, Pesto, or Chive. Sizes: as above. ORDER

Crottin
2001 American Cheese Society, 2nd Place for Crottin.
Our crottin are aged anywhere from 2 to 8 weeks, to suit every palate. When young, they are enveloped in a downy, mushroomy white rind and have a delicate, lemony interior. With age, they become creamier and spicy.

Goat Milk Camembert
1999 American Cheese Society Farmhouse Goat Cheese 1st Place Award Winner.
This is a mold-ripened cheese aged 5 to 8 weeks and made from pasteurized milk. The flavor of this little 4-5oz. cheese is truly from the Ozarks. Deep mushroomy aroma, with a white rind yielding earthy and "blue" flavor notes. The texture when young is a satisfying combination of a soft, melty exterior with a firm, complexly flavored center. When ripened throughout, this Camembert is extraordinary.

Raw Goat Milk Gouda
Aged 4 months to a year (if we can keep it in stock!), Doeling Dairy Goat Gouda is subtle cheese with a rich, moist texture. Our Gouda has a delicate, nutty flavor with a sweet, milky finish. We hand-dip our 2 and 6 pound wheels in black wax and then turn them throughout their ripening period. Sizes: Cuts (4, 8 and 16oz.), 2lb. and 6.5lbs. Wheels. ORDER
