Doeling
Dairy over-looks the White River Valley near the town of Fayetteville
in the northwestern corner of Arkansas's Ozark Mountains. The
Dairy is a small, 16 acre hillside farm, typical of the area.
Doeling Dairy grew out of a love of cheese and dairy goats and a passionate
belief in a small-scale, sustainable approach to farming
and food production. We are involved in all aspects of creating Doeling
Dairy products - from raising young doe kids and milking and feeding
of the milking does, to making, ripening, and packaging our cheeses. Our
name "Doeling Dairy" is a bit of tongue-in-cheek fate: A "doeling" is
a young female goat kid - one of the animal world's most mirthful,
curious, and undaunted creatures; Donna Doel, as cheesemaker and owner
of the dairy is a kindred spirit.
Our 40 to 50 head dairy goat herd of registered
Saanen, Alpine, and LaMancha breeds live a good life. They are fed free-choice
pasture, orchard grass and alfalfa hay, and high-quality dairy grains.
A small herd allows us to pay strict, personal attention to animal
health and well being, as well as assuring the production of clean, pure
goat milk free of drug residues or hormones. Our dairy goats are
milked in a clean milking parlor built to Grade-A standards and our milk
is immediately cooled after each milking to maintain the highest
quality milk, as specified by Arkansas State Health Department Licensing.


Our cheese plant
is located right on the farm and is capable of processing up to 450 gallons
of milk per week. Our plant is also fully licensed by the Arkansas
Department of Health Milk Program and is inspected by both state and federal
entities. Our cheeses are produced in the European farmstead
cheesemaking tradition – small production batches utilizing only the freshest
milk; careful hand labor and meticulous ripening techniques create authentic,
flavorful cheeses. We strive to develop cheeses that reflect the
natural elements and seasons of this Ozark region.

and distributors, at local farmers' markets, direct
from the Doeling Dairy
Farm Store and mail-order. We also can schedule
group tours
and tasting events.
